Sautéed Garnet Yams


2 medium-sized Garnet Yams, peeled
2 tablespoons cooking oil
2 tablespoons butter or margarine
2 plantains, peeled and chopped
1/2 cup chopped green onion
1 clove garlic, minced
1/2 cup low-sodium chicken or beef broth
1 to 2 tablespoons chopped fresh thyme, chervil, dill, or savory
Salt and pepper to taste


Cut yams into slices and boil until tender; set aside.

In large skillet, combine oil and butter until hot. Add yams, plantains, onions, and garlic. Cook, stirring frequently, about 5 minutes. Add broth; cover and simmer 10 minutes or until plantains are tender. Add fresh herbs; season to taste with salt and pepper.
