Snow Pea and Sunchoke Salad


1 8-ounce package Snow Peas
2 cups Sunchokes®, thinly sliced
2 tablespoons oil
1 tablespoon pimiento or red bell pepper, chopped
1 teaspoon soy sauce
1/4 teaspoon salt
1/4 teaspoon sugar
1 tablespoon white vinegar
Lettuce (optional)


Remove stems and strings from snow peas. Drop snow peas and sliced sunchokes into rapidly boiling water. As soon as water boils again, cook 1 minute. Remove. Drain at once. Combine remaining ingredients and toss lightly. Chill several hours before serving. Serve in small bowls or on a bed of lettuce.
