Southwestern Veggie Medley


2 tablespoons vegetable or peanut oil
2 cups Sunchokes®, peeled and chopped.
1/2 cup onion, sliced
1-1/2 cups Cactus Pads (thorns removed), Okra, or Haricots Vert cut into 1/2 inch slices or chunks
1/2 cup frozen sweet corn, thawed per packages instructions
2 tablespoons Fresh Anaheim Chiles, chopped
1 garlic clove, minced
1-2 tablespoons lime or lemon juice
1/8 teaspoon crushed red pepper
1/4 teaspoon black pepper


In a large skillet, heat oil. Sauté sunchokes and onions for 3 minutes. Add cactus leaves, okra, or green beans along with corn, chile, and garlic; sauté 2 to 3 minutes over medium-high heat. Add lime juice and seasonings and stir-fry for 2 minutes. Taste for seasoning.
