2 tablespoons butter
1 medium yellow onion, diced
1 medium green bell pepper, diced
1 12-ounce package Frieda’s Soyrizo™
12 large eggs
1/3 cup low-fat milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup chopped Fresh Cilantro
1 cup grated sharp cheddar cheese
Nonstick cooking spray
Preheat oven to 375 degrees.
Melt butter in another pan on medium heat, then sauté onion and bell pepper until onions are translucent. Remove casing from Soyrizo™ and add to the vegetables. Crumble and fry until slightly browned. Let cool slightly.
Whisk together eggs, milk, salt, and pepper. Stir in Soyrizo mixture and cilantro. Pour into 10×13-inch dish lightly sprayed with cooking spray. Bake 25-28 minutes or until cooked through.
Cool slightly and cut into squares. Serve with fresh salsa.
