Soyrizo Tortilla Torta


2 12-ounce packages Frieda’s Soyrizo™
2 16-ounce cans fat-free refried beans
1 8- or 11-ounce container guacamole
1 cup chopped scallions
1/4 cup salsa verde (green salsa)
1 28-ounce can enchilada sauce
12 6-inch corn tortillas
1 cup grated, reduced fat cheese, preferably jalapeño-flavored
Salt and pepper, to taste
Plain yogurt or sour cream (optional)


Brown Soyrizo, according to package directions, and set aside to cool.

Preheat oven to 425 degrees.

Lightly oil or spray 13×9-inch baking dish with nonstick spray.

In medium bowl, combine beans, guacamole, 1/2 cup scallions, and salsa verde.

Spread enchilada sauce over bottom of prepared pan, cover with layer of tortillas. Spread tortillas with 1/3 bean mixture, sprinkle with 1/3 of Soyrizo crumbles and 1/3 of grated cheese.

Continue layering with sauce, tortillas, bean mixture, cheese, and Soyrizo, ending with tortillas. Spread top with remaining sauce and sprinkle with remaining cheese and scallions.

Lightly oil sheet of foil or coat with nonstick spray. Place foil, oiled side down, over tortilla stack. Bake 20-25 minutes, or until heated through. Let stand 5-10 minutes before serving. Top with plain yogurt or sour cream, if desired.
