Spicy Asian Pasta Salad


1 16-ounce package Frieda’s Chow Mein Noodles, cooked according to package directions and drained
2 cups fresh spinach leaves, lettuce, or cabbage, shredded
1 1/2 cups cucumber, julienne-cut
1 2-ounce package Snow Peas, stringed and halved crosswise
1 cup red radishes, shredded
1/2 cup peanut halves
4 green onions, chopped

3 tablespoons sesame or peanut oil
2 tablespoons vinegar
2 tablespoons soy sauce
2 tablespoons cilantro or parsley, chopped
1 tablespoon hoisin sauce
1 tablespoon Fresh Ginger, minced
2 cloves garlic, minced
1 dried red chili, crushed


In large bowl toss together chow mein noodles, drained, along with spinach, cucumber, snow peas, radish, peanuts, and onions. For dressing, combine all ingredients in shaker jar. Shake until well blended. Pour over noodle mixture. Toss well to coat. Chill 30 minutes to 2 hours to blend flavors.
