Spicy Soyrizo™ Chili

2 tablespoons cooking oil, such as grape seed
3 bell peppers, diced
4 stalks celery, diced
4 cloves garlic, diced
10 baby portabella mushrooms, diced
1 to 3 chipotle peppers, diced (depending on personal heat tolerance)
1 package Frieda’s Soyrizo, removed from casing
4 cups diced tomatoes
3 cups soaked red kidney beans
Salt & pepper, to taste

Optional: Sour cream and sliced mangoes


In large saucepan, heat cooking oil on medium-high heat. Add bell peppers, celery, and garlic, then saute 5 minutes. Add mushrooms and chipotle peppers; saute another 5-7 minutes, until tender. Stir in chorizo until fully incorporated. Add tomatoes and red kidney beans. Lower heat to medium-low and simmer at least 30 minutes. (The longer it simmers, the more flavors develop.)

Optional: Serve with sliced ripe mango for a sweet bite and top with sour cream.
