Sunchoke® Tempura


2/3 cup all-purpose flour
1/2 cup cornstarch
1/4 teaspoon salt
1 cup ice water
1 egg yolk
2 egg whites, stiffly beaten
1/2 pound Sunchokes®, cut into 1/4-inch-thick slices
Cooking oil for deep-frying
Soy sauce or marinara sauce for dipping


In a medium bowl stir together flour, cornstarch, and salt. Stir in ice water and egg yolk until blended. Fold in beaten egg whites. Heat oil 3 inches deep in a small saucepan to 365 F. With tongs, dip each slice of Sunchokes into batter to coat. Deep-fry in oil about 2 minutes or until golden brown. Drain well on paper toweling. Serve hot with soy sauce or marinara sauce for dipping.
