1 pound package Sunchokes®
1 green bell pepper, seeded and chopped
2 green onions, sliced
1 clove garlic, rinsed
3 tablespoons cooking oil
One 6-ounce can tomato sauce
1/2 teaspoon ground black pepper
2 teaspoons chopped Fresh Rosemary, or ½ teaspoon crushed dried rosemary
2 teaspoons chopped Fresh Chervil, or ½ teaspoon crushed dried chervil
2 teaspoons chopped Fresh Basil, or ½ teaspoon crushed dried basil
Scrub sunchokes well. Slice. Briefly place sliced sunchokes in water with a little lemon juice has been added. Drain. Place sunchokes in a large skillet with bell peppers, onions, garlic, and oil. Stir together until tender for about 5 minutes. Stir in tomato sauce, pepper, and herbs. Cover and simmer for 10 minutes. Serve as a side dish with meats, poultry, or burgers.
