Tamarindo Sauce


1 Frieda’s Tamarindo, shelled
2 tablespoons very hot water
1/4 cup peanut or vegetable oil
2 tablespoons soy sauce
1 clove garlic, crushed
2 teaspoons sesame seed


Remove the seeds from tamarindo pulp and place the pulp in the hot water for 15 minutes. Crush the pulp in the liquid with the back of a spoon to release as much pulp as possible. Discard the skin from the pulp. Stir together the tamarindo liquid, oil, soy, garlic, and sesame seed. Try serving sauce over fish, chicken or beef.
