Three Squash Medley

Ingredients:

1 green or white Frieda’s Chayote Squash, peeled quartered and cored
1/3 cup chicken broth
2 Frieda’s Scallopini Squash, halved an sliced
1 large zucchini, thinly sliced
1 cup corn (fresh, frozen or canned)
2 tablespoons lemon juice
1 teaspoon grated lemon peel
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons grated Parmesan cheese
Lemon twists for garnish

Steps:

Thinly slice the chayote squash and place in a shallow glass dish. Pour chicken broth over the squash. Cover with plastic wrap, leaving one corner vented for escape of steam. Microwave on high for 4 minutes. Add scaloppini, zucchini squash and corn to cooked chayote and, in a separate bowl, stir lemon juice, lemon peel, salt, and pepper and pour over the squash mixture. Cover and microwave on high for 3 minutes, turning dish and stirring vegetables once during cooking. Uncover; sprinkle on cheese. Cover again and let stand 2 minutes.
