Twice Baked Potatoes with Pizzazz


3 large baking potatoes or Frieda’s Yellow Finnish potatoes
3/4 cup dairy sour cream
1 tablespoon grated fresh Frieda’s Horseradish
4 tablespoons butter or margarine
3 tablespoons milk or light cream
1 tablespoon fresh chopped chives or chervil
Additional sour cream and chopped chives or chervil,  if desired


Scrub and bake potatoes in a 375°F oven about 1 hour or until done. Halve potatoes while warm; remove flesh. Reserve skins. In a large bowl combine the potato pulp; sour cream, horseradish, butter or margarine, milk or cream, and fresh chopped chives or chervil. Mash with electric mixer till smooth and well blended. Spoon potato mixture back into potato shells; place in a shallow baking pan. Cover with foil; return to oven. Bake 15 minutes more or till heated through.
