Wild Rice with Sunchokes® and Papaya


1 2-ounce package Wild Rice, soaked according to package directions
1/2 cup long-grain white rice, uncooked
1 1/3 cups chicken or beef broth
2 tablespoons cooking oil or olive oil
1 cup Sunchokes®, unpeeled, chopped
1/2 cup Frieda’s Dried Papayas
1/4 cup chopped onion
2 tablespoons orange juice
1 tablespoon fresh chives
1/2 teaspoon salt
1/4 teaspoon pepper


In a 1 1/2-quart saucepan, cook wild rice according to package directions. In a separate pan, cook white rice in chicken or beef broth about 20 minutes or until all the liquid is absorbed. Meanwhile, in a skillet, heat oil. Saute sunchokes with dried papayas and onions about 5 minutes or until sunchokes are crisp-tender. Stir in orange juice, chives, salt, and pepper. Stir in cooked wild rice and white rice until well combined.
