Wonton Egg Drop Soup
12-18 filled wontons, uncooked (for filling recipes, go to “recipes,” then search on “filling”)
6 cups soup stock (beef, chicken, or onion)
Half of 8-ounce package purple snow peas or green snow peas, stringed
1 tablespoon soy sauce
2 beaten eggs
2 green onions, sliced
Cook filled won tons in 1 quart simmering water 5 minutes. Drain; discard cooking liquid.
Heat soup stock to boiling. Add snow peas and soy sauce. Cook peas 2 minutes. Beat egg mixture with fork. Add to hot soup all at once. (Eggs will cook instantly.) Remove soup from heat.
To serve soup, place 3 cooked won tons in soup bowl. Pour soup over won tons. Sprinkle green onion over each serving.
