Ingredients

  • 9-inch prepared pie crust

  • ¾ cup heavy whipping cream

  • 2 tablespoons melted butter

  • 1 large egg

  • 3 tablespoons brown sugar

  • 1 teaspoon coarse salt

  • ½ teaspoon freshly cracked black pepper

  • ¼ teaspoon ground nutmeg

  • 3 medium purple sweet potatoes, peeled, thinly sliced

  • ⅓ cup shredded Gruyere, white cheddar or Swiss cheese

  • ¼ cup chopped walnuts or pecans

  • 2-3 sprigs fresh thyme, stems removed, minced

Cooking Steps

    Preheat the oven to 350 degrees.

    Place pie crust in a 9-inch tart pan or shallow pie plate. Press down around the bottom and sides. Use your thumbs to form ridges around the edges.

    In a large bowl, whisk together cream, melted butter, egg, brown sugar, salt, pepper and nutmeg.

    Arrange one layer of sliced sweet potatoes inside the pie crust. Pour half of the cream mixture evenly over the sweet potatoes. Repeat another layer of sliced sweet potatoes. Pour the remaining cream mixture evenly on top.

    Top with shredded cheese and walnuts or pecans. Sprinkle with minced thyme.

    Bake 40-45 minutes or until the potatoes are tender, egg mixture is set and crust is golden brown. Let sit 10-15 minutes before slicing to serve.
