Ingredients

  • 1 medium dragon fruit, peeled and cubed

  • 2-ounces spirits (tequila, vodka, white rum, etc.)

  • 2-ounces triple sec

  • 2-ounces freshly squeezed lime juice

  • 1 tablespoon simple syrup or agave nectar

  • 1 medium lime, cut into wedges, for the rim

  • Coarse salt or sugar, for the rim

  • Dragon fruit slices and fresh rosemary, for garnish

Cooking Steps

    Place the dragon fruit cubes, spirits, triple sec, lime juice and simple syrup or agave nectar in a high-powered blender; puree until smooth.

    Run the lime wedge around the rim of 2 rocks glasses. Dip each one in coarse salt or sugar. Pour the dragon fruit mixture into each glass. Garnish with dragon fruit slices and fresh rosemary, as desired. Serve immediately.

    Note: To make this a mocktail, skip the spirits and triple sec, and puree the dragon fruit, lime juice and simple syrup or agave nectar together, adding additional lime juice as desired. Proceed to step 2.

    Tip: Add a few ice cubes to make it a frozen margarita
