1 Frieda’s jackfruit
2 tablespoons coconut oil, melted
1 teaspoon honey
1/2 teaspoon key lime juice
1/4 teaspoon salt
1 teaspoon key lime zest, for garnish
Preheat grill to medium-high heat.
Combine coconut oil, honey, key lime juice and salt in small bowl.
Wear gloves to slice jackfruit open with a pre-oiled knife to prevent sap from sticking to it. Pull out pods using paring knife or your fingers. Thread pods onto grilling skewers. Brush jackfruit with coconut oil mixture, then grill 3-4 minutes on each side, until lightly charred.
Transfer grilled jackfruit to serving platter; garnish with key lime zest.
