Stokes Purple® sweet potatoes, sliced lengthwise
2 teaspoons butter, softened
2 tablespoons maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon salt
4 jumbo marshmallows
4 graham crackers
1 milk chocolate bar, split into four pieces
Preheat grill to high heat.
Slice Stokes Purple® sweet potato in halth lengthwise and prick with fork all around.
Place each half on piece of aluminum foil. Spread cut sides with butter, drizzle with maple syrup, and sprinkle with cinnamon and a pinch of salt. Wrap.
Place on grill cut side down. Grill for 20-30 minutes, depending on size of potato, flipping once halfway through. When done, potatoes should be very soft.
Spread some grilled potato on a graham cracker, followed by a piece of chocolate. Place toasted marshmallow on top of chocolate, then sandwich with another graham cracker. Enjoy warm.
