2 ounces mascarpone, at room temperature
1/4 cup creamy peanut butter
1 banana, sliced
2 tablespoons honey-roasted peanuts, roughly chopped
Caramel sauce, for garnish
Shaved dark chocolate, for garnish
Using a handheld mixer, mix mascarpone and peanut butter on medium speed until fully combined and smooth.
To assemble, heat a large sauté pan over low heat. Once warmed, add crêpes, one at a time, warming for 15 seconds on each side. Remove from heat to plate and spread peanut butter mixture over crêpe.
Lay sliced bananas on top and fold them in half or quarters.
Top with sliced bananas, chopped peanuts, caramel drizzle, and shaved chocolate.
