2 limes, juiced
3 tablespoons honey
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 cup olive oil
3 cups arugula
6 to 8 basil leaves, plus more for garnish
6 to 8 mint leaves, plus more for garnish
1/2 Frieda's Snow Dragons™ fruit, cubed
1/2 Frieda's Honey Dragons® fruit, cubed
1/2 Frieda's Fire Dragons® fruit, cubed
1 Frieda's watermelon radish, julienned
1/4 cup crushed pistachios
Dressing: Combine all ingredients except oil and whisking well. Stream olive oil into mixture slowly while continuing to whisk thoroughly. Taste and season with more salt, if desired.
Salad: On large platter, or in salad bowl, toss to combine arugula, basil leaves, mint leaves, and 1/2 of dressing. Layer radish and cubed dragon fruit on greens, then top with crushed pistachios and parmesan shavings. Garnish with mint and basil leaves. Add more dressing to top if desired.
