Cactus Pear Mocktail
6 Red Cactus Pears, peeled and cut into chunks*
1/2 cup pineapple juice
Slices of Cactus Pear or fresh pineapple for garnish
Place cactus pear chunks in blender with pineapple juice. Cover and process until fruit is pureed. Strain out seeds if desired. Pour mixture into ice-filled goblets.
Variation: For a smoothie, blend ingredients in a blender with crushed ice.
