1 Frieda’s red fleshed dragon fruit, roughly chopped into small pieces
1 ripe mango
4 to 5 fresh mint leaves
4 ounces pineapple juice
1 1/2 ounces Malibu coconut rum (optional)
1/3 cup sparkling water
Scoop flesh from mango into blender container and purée until completely smooth.
Add small handful of fresh mint leaves to bottom of cocktail shaker and muddle. Add 1 tablespoon red dragon fruit, 2 tablespoons mango purée, pineapple juice and rum (if using) to shaker and shake.
Fill glass with crushed ice; strain beverage into glass.
Add 2 teaspoons chopped red dragon fruit and top off with sparkling water. Garnish with fresh mint.
