To cook the sweet potatoes, preheat the oven to 400 degrees. On a baking sheet, toss purple sweet potatoes with olive oil, salt and pepper until thoroughly coated. Roast 25-30 minutes or until tender and lightly caramelized on the edges. Set aside.
To make the candied macadamia nuts, place the macadamia nuts, brown sugar, butter and salt in a small skillet over medium heat. Cook until sugar starts to melt, about 5 minutes, stirring frequently. Transfer to a parchment paper-lined baking sheet; spread into an even layer. Let rest until hardened, 5-6 minutes.
To make the dressing, place all dressing ingredients in a blender or food processor; puree until smooth. Taste and adjust the seasoning, if necessary.
To build the salads, toss the mixed greens with half of the dressing; divide dressed greens into 4 large serving bowls. Top with roasted purple sweet potatoes, guava, feta, dried cherries, candied macadamia nuts and crispy prosciutto, if using. Drizzle with remaining dressing. Serve immediately.
