Ingredients

  • 2 tablespoons olive oil

  • 1 medium onion, sliced

  • 2 cloves garlic, minced

  • 3 cups fresh jackfruit pods*

  • Salt and pepper, to taste

  • 2 tablespoons brown sugar

  • 1 teaspoon paprika (or smoked paprika)

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • 3/4 cup barbecue sauce, plus more for serving

  • 1/4 cup water

  • 6 burger buns

  • Optional toppings: coleslaw, thinly sliced red onions, avocado, and/or pickle slices.

  • * For cooking, choose jackfruit that is on the green side and does not yield to pressure. It'll be a bit harder to process, but the pods will be less sweet and more pork-like than sweet, ripe fruit.

Cooking Steps

    In an oven-proof skillet or Dutch oven, heat oil over medium heat.

    Saute onions and garlic until translucent.

    Add jackfruit and spices, and season to taste.

    Add barbecue sauce and water and stir. Bring the mixture to a simmer, then cover.

    Reduce heat, and let simmer for 20-30 minutes, stirring occasionally until the liquid is absorbed and the jackfruit is shredding.

    Remove from heat. Add more barbecue sauce, if desired, and serve warm on burger buns, topped with toppings of your choice.
