Cactus Pear Ice Cream

This ice cream is rich, mildly sweet, and filled with fruit flavor.

Ingredients

  • 6 Frieda's Cactus Pears

  • 1 1/2 cups light cream

  • 1 cup sugar

  • 2 egg yolks, slightly beaten

  • 1 cup heavy cream

  • Green, yellow, or red food coloring, if desired

  • 2 egg whites, beaten stiff

Cooking Steps

    Using tongs, halve Cactus Pears. Scoop out fruit; chop. Place fruit in blender or food processor container; cover and process until pureed. Strain out seeds if desired.

    Place fruit puree in a saucepan with light cream, sugar, and egg yolks. Whisking constantly, cook over medium heat until mixture coats a metal spoon, about 5 minutes. Remove from heat; stir in heavy cream and a few drops desired food coloring (to match color of fruit). Fold in beaten egg whites (do not stir).

    Pour mixture into ice cream maker, and process according to manufacturer's directions. (Or, pour into a shallow metal pan, cover and chill for 2 hours. Break up mixture; beat with mixer until fluffy. Pour mixture back into pan; cover and freeze until firm).
