2 Frieda's Stokes Purple® sweet potatoes, scrubbed
1/4 cup butter, softened
1 teaspoon salt
1/2 teaspoon black pepper
Preheat grill to high heat.
Slice Stokes Purple® sweet potatoes in half lengthwise and prick with fork all around.
Spread cut sides with butter and sprinkle with salt and pepper.
Wrap each potato half in aluminum foil and place on grill cut side down. Grill for 20-30 minutes, depending on size of potato, flipping once halfway through. When done, potatoes should be fork tender.
Unwrap potatoes and transfer to serving board. Serve warm.
