1 cup hothouse cucumber, peeled, roughly chopped
1 cup pineapple, peeled, cored, roughly chopped; reserve one round slice for garnish
1/2 cup coconut milk, chilled
1 1/2 cup water, chilled
2 Frieda’s Snow Dragons™ Fruit, peeled and roughly chopped; reserve skin for garnish
1/2 cup mint leaves, loosely packed
Thin-sliced cucumber for garnish, if desired
Place cucumber, pineapple, coconut milk and water in blender container and purée until smooth.
Add Frieda’s Snow Dragons™ Fruit and mint; pulse until just combined.
Pour over ice. Garnish with cucumber and pineapple slice, and snow dragon skin.
Tip: refrigerate dragon fruit, cucumber, and pineapple before puréeing
