1/2 cup sugar
1 loosely packed cup of mint leaves
1/2 cup water
3 cups cubed honeydew melon
juice of 1 lime
2 starfruits, one cubed and one cut into 1/4" slices
In a food processor, pulse the sugar and the mint leaves until the mint is finely chopped and the sugar is incorporated.
Place the mint-sugar mixture into a small saucepan with the water, then ring to a boil to dissolve. Remove from heat, strain the mint leaves, and let cool.
Place the honeydew melon, cubed stafruit, mint syrup, and lime juice in a large blender. Pulse until smooth and no chunks of fruit remain.
Divide the mixture evenly between the popsicle molds. Gently insert the starfruit slices into each popsicle mold, making sure the the fruit lays flat against the sides of the popsicle molds. Freeze for 30 minutes, insert sticks, and continue to freeze until solid.
