These scrumptious power bites are packed with the nutrition power of purple sweet potatoes. With no added sugar, they are sweetened naturally with dried fruits, and are packed with healthy fats and plant proteins, too. These bites are easy to whip up and require no baking—they’ even vegan and gluten-free! Pack up these treats for a healthy snack, post-workout boost, or guilt-free dessert.
1/2 cup walnut pieces
1/4 cup old-fashioned oats
1/4 cup sunflower seeds
2 tablespoons chia seeds
2 tablespoons flax seeds
2 tablespoons hemp seeds
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1 teaspoon vanilla extract
1/2 cup creamy peanut butter
1/3 cup dried blueberries
10 large dates (like Medjool), pitted
1 cup cooked, mashed, chilled Frieda’s Stokes Purple® sweet potatoes*
2 tablespoons maple or agave syrup (optional)
1/4 cup shredded, unsweetened coconut
In food processor container, finely grind together walnuts and oats, along with sunflower, chia, flax, and hemp seeds. Add remaining ingredients, except coconut, and process a few more minutes until all ingredients are smooth and form a wet dough.
Remove dough from food processor. Shape into small balls (about 1 tablespoon each). Roll each ball into shredded coconut. Place in airtight storage container and chill until serving.
*Peel and cube purple sweet potatoes and boil until fork tender, or use perfectly baked Stokes Purple sweet potatoes.
