Yuca Root with Lime & Cilantro


1 pound Frieda’s Yuca Root, peeled and sliced
1 tablespoon butter or margarine
1 tablespoon lime juice
1 tablespoon fresh cilantro, chopped
Crushed red pepper to taste
Salt and pepper to taste


Cut yuca slices into thin sticks. Place in saucepan with water to cover; bring to a boil. Reduce heat and simmer uncovered for 30 minutes until very tender. Drain. In same pan, melt butter and stir in lime juice, cilantro, red pepper, salt and pepper. Toss with cooked yuca; serve.
