1/4 cup chia seeds
1 cup coconut milk (full fat, recommended)
1/4 teaspoon vanilla extract
2 tablespoon brown sugar
A tiny pinch of sea salt
1 cup chopped ripe jackfruit (about 4-5 pods)
1/4 cup unsweetened toasted coconut flakes
In a medium bowl, mix together chia seeds, coconut milk, vanilla extract, brown sugar, and sea salt. Cover, and refrigerate for 30 minutes or overnight until the seeds are puffed up.
In 2 serving bowls or jars, layer in pudding, jackfruit, and coconut flakes, and repeat one more time. Serve cold.
