3/4 cup unsweetened almond milk
1/2 cup Stokes Purple® sweet potato*, baked, cooled, and mashed
1/2 cup orange juice
1 cup frozen peaches
2 tablespoons agave syrup
1 teaspoon orange zest
1/2 teaspoon fresh ginger, grated
6 ice cubes
Pinch of salt
In blender container, pulse all ingredients until fully combined.
*How to bake Stokes Purple® sweet potatoes: Preheat oven to 350 degrees. Wrap Stokes Purple® sweet potatoes in aluminum foil and place on baking tray. Bake 1 1/2-2 hours. Keep them wrapped and let cool 1-2 hours, or put them in a zip-top bag and refrigerate overnight. The dense flesh of this potato takes a bit longer to cook than most other sweet potatoes, but it’s worth the wait!
