1 to 2 Dragon Fruit (white, red, or both), peeled and cut into small cubes (about 2 cups)
1 cup small cubes of Baby Pineapple or regular pineapple
1 small Shallot, peeled and finely chopped
1 tablespoon chopped cilantro
Juice from 1 lime (or 2-3 key limes), or to taste
Salt to taste
1 Orange Habanero Pepper, seeded and chopped, to taste
In a medium bowl, gently combine dragon fruit, baby pineapple, shallot, and cilantro. Season to taste with lime juice, salt, and habanero pepper. Chill for at least 15 minutes for the flavors to mingle. Serve with chips or use to top seafood.
